Our old block Chardonnay is cane pruned each year. We encourage late budburst and flowering each year to get the vines through the mid spring storms we have each year. The fruit is hand harvested in the early part of the morning and stored in a cool room overnight, with Greg sleeping alongside them, to ensure the fruit is cold for processing the next day.
